Creamy Mini Spinach Frittatas

These light and simple mini frittatas are great for a brunch or as a light appetizer. The creamy Neufchatel adds great flavor and texture.
 

Ingredients

  • 4 large eggs
  • 2 oz Neufchatel cheese, softened
  • 1/2 cup cream
  • 1 1/2 cup shredded Parmesan cheese
  • 1/8 cup dried onion flakes
  • 1/2 tsp whole tri-colored peppercorns
  • 1 clove garlic, smashed
  • 1/2 cup chopped fresh baby spinach, packed

Method

Preheat oven to 425 degrees. Place eggs, Neufchatel, cream, Parmesan, onion flakes, peppercorns and garlic in a blender then process until smooth. Place chopped spinach in a bowl, pour egg and cheese mixture on top of spinach, then stir to combine. Carefully prepare a small muffin tin with cooking spray. Spoon by 1/8 cup amounts into each tin. Bake 10-12 minutes then let set in pan 2-3 minutes before removing.
