Crepes With Attitude

These crepes get their attitude from the Mexican seasonings that make them delicious. These are great as an appetizer or as an addition to your next brunch.
Ingredients
- 2 8oz pkg cream cheese, softened
- 1 cup shredded Monterey Jack cheese
- 1 cup hot or mild salsa
- 1 pkg taco seasoning
- 1/4 cup olive oil
- 4 eggs
- 1/2 cup milk
- Salt and pepper to taste
- 12 - 6" flour tortillas
- Paprika

Method
Fold the salsa, taco seasoning and grated cheese into the cream cheese and set aside. Pour a small amount of olive oil in a 6 to 8" skillet and heat to medium. Beat the eggs with the milk, add the salt and pepper, and pour the egg mixture in a shallow bowl. Dredge the flour tortillas in the egg mixture one at a time and cook in the skillet until the egg is cooked, but only slightly brown. Remove each tortilla as it is cooked to a covered pan to stay warm. When all the tortillas are cooked, spread the cheese mixture on each of the tortillas and roll. Place them on a serving dish, rolled edge down and sprinkle with paprika. Serve a dish of sour cream on the side.
Notes: These can be made as hot as your guest like them. Could be sliced and used as an appetizer also.
