Cucumber Rounds with Chicken Salad


Toasted almonds add a crunch to these chicken-topped appetizers. Prepare the chicken mixture up to 1 day ahead.



Ingredients:

  • 1 skinless, boneless chicken breast half, cooked
  • 1 celery stalk, finely chopped
  • 2 to 3 tablespoons mayonnaise
  • Salt & Pepper to taste
  • 1 English Cucumber
  • Slivered Almonds, toasted and chopped

Method

Chop chicken into small pieces and put into bowl. Add celery and salt & pepper to taste. Add enough mayonnaise to moisten. Stir gently. Taste mixture. Add more salt or pepper if desired. Peel and slice cucumber into rounds. Top with chicken salad. Add toasted almonds to top.

Notes: In a hurry? Purchase an already cooked chicken breast at the deli! The mixture of textures & tastes makes this a wonderful treat! Everyone I know loves these!

Number of servings: 18-20 depending on size of cucumber
