Deluxe Chicken Club Dip
This chicken club dip is true to its name packed with tomatoes, bacon, and Colby Jack cheese, blended nicely with sour cream and mayonnaise. This makes a great snack.
Ingredients
- 1 cup chicken, cooked and shredded (rotisserie chicken works great)
- 1 cup light sour cream
- 3/4 cup reduced fat mayo
- 1 1/4 cup shredded Colby Jack cheese
- 1 cup cooked bacon
- 1 cup finely chopped tomato
- 1/2 tsp onion powder
- 1/4 tsp salt
- Lettuce for garnish
- Melba toast, pita chips, or crackers for dipping

Method
Combine chicken, sour cream, mayo, 1 cup cheese, 3/4 cup bacon, 3/4 cup tomato, onion powder, and salt together in a mixing bowl. Refrigerate 1-2 hours for best blend of flavors. To serve, arrange several lettuce leaves in center of a serving platter. Spoon dip on top of lettuce. Garnish with remaining bacon, cheese, and tomatoes. Arrange toasts, crackers, or pita chips around platter for dipping.
Notes: This is a delicious, light and easy take on the traditional chicken club sandwich. Very little prep time makes this the perfect dish for a hot summer's day.
