Deviled Egg Cookies

- Prep Time: 30 minutes + decorating time
- Cook Time: 20 minutes + cooling
- Total Time: 4 hour
Ingredients:
| 1½ cups | Sugar |
| ⅔ cup | Shortening or Butter |
| 2 | Eggs |
| 2 Tbsp | Milk |
| 1 tsp | Vanilla Extract |
| 3¼ cups | Flour |
| 2½ tsp | Baking Powder |
| ½ tsp | Salt |
| Frosting | |
| Yellow Food Coloring | |
| Red Decorating Sugar |
Directions:
Cream together sugar & eggs. Add eggs, milk & vanilla. In separate bowl, sift together flour, powder & salt. Gradually mix flour mixture into butter mixture. Cover with plastic wrap. Refrigerate at least 1 hour.
Preheat oven to 350. Roll approximately 1 T dough into an egg shape. Press onto a cookie sheet. Place eggs 2 inches apart. Bake 10-12 minutes or until set. Remove from pan. Cool completely on wire rack.
When completely cool, frost the bottom of each cookie with a layer of white frosting, then pipe a swirl of yellow frosting on top to look like a deviled egg. Sprinkle with red sugar to look like paprika. Looks best if served in a deviled egg dish.
