Easy Bruschetta

Thin slices of baguette are brushed with garlic oil and toasted, then topped with a tomato, basil and garlic mixture.
Ingredients
- 3-4 fresh tomatoes, diced
- 6 fresh basil leaves, chopped
- 3-4 cloves garlic, minced
- 1 Tbsp olive oil
- 1 tsp truffle oil
- 1 Tbsp grapeseed oil
- Dash salt
- Dash freshly ground black pepper
- Bread:
- 1 baguette, thinly sliced
- 2 Tbsp olive oil
- 1 clove garlic, minced

Method
Preheat oven to 350 degrees. Mix olive oil and garlic. Brush sliced bread with oil mixture. Be sure to evenly coat both sides. Place on cookie sheet and bake for approximately 4-6 minutes each side or until slightly brown and crunchy. Cool bread slightly. While bread is in oven combine all ingredients for checca. Top baked bread with checca mixture; serve immediately. Do not do ahead, as bread will get soggy. You may serve the checca in a bowl with the bread surrounding it, if desired.
Notes: An equal amount of olive oil can be substituted for the truffle and grapeseed oils, if they are not available.
