Easy Tortilla Soup

This appetizer soup contains cooked chicken and broth, plus salsa, cumin and lime juice for flavor. It's topped with fried tortilla strips and shredded cheese.
Ingredients
- 1 cup cubed cooked chicken
- 2 14-oz cans chicken broth
- 1 medium onion, diced
- 1 cup chunky salsa (mild or medium)
- 1 tsp cumin powder
- 3 tbsp lime juice
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 4 corn tortilla, cut into bite-size strips
- 1/2 cup shredded colby-monterey jack cheese

Method
In large soup pot combine chicken, broth, onion, salsa and cumin. Bring to boil; reduce heat and simmer for 30 minutes. Season with salt and pepper to taste. Add lime juice. Meanwhile, in skillet heat oil over medium heat. Fry tortilla strips for 2 to 3 minutes until golden brown. Drain strips on paper towels. Serve soup in bowls; top with tortilla strips and shredded cheese.
