Edamame Hummus

Edamame are the seeds of fresh soybeans. This simple dip is a great way to add more soy to your diet.
Ingredients
- 1/2 lb frozen shelled edamame
- 1/4 cup sesame tahini
- 1/4 cup water
- Juice of 1 1/2 lemons
- 1 clove garlic, minced
- 1/2 tsp sea salt or to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh mint
- 1 jalapeno, diced

Method
Microwave edamame in a covered microwave safe bowl 2-3 minutes. Place all ingredients in a food processor and puree until smooth. Taste and add salt to taste. Serve with assorted dippers; raw vegetables, pita crisps, assorted chips, etc.
Notes: Doubles easily for larger groups. I served this at our last football party and everybody loved it. Edamame are green soy beans and are available in the frozen section of many supermarkets and natural food stores.
