Ingredients:
| ½ lb | Frozen Shelled Edamame |
| ¼ cup | Sesame Tahini |
| ¼ cup | Water |
| Juice of 1 1/2 Lemons | |
| 1 clove | Garlic, minced |
| ½ tsp | Sea Salt or, to taste |
| 2 Tbsp | Olive Oil |
| 2 Tbsp | Fresh Mint |
| 1 | Jalapeno, diced |
Directions:
Microwave edamame in a covered microwave safe bowl 2-3 minutes. Place all ingredients in a food processor and puree until smooth. Taste and add salt to taste. Serve with assorted dippers; raw vegetables, pita crisps, assorted chips, etc.
Helpful Tips:
Doubles easily for larger groups. I served this at our last football party and everybody loved it. Edamame are green soy beans and are available in the frozen section of many supermarkets and natural food stores.
