Eggplant Caprese

These little towers of eggplant, are quite impressive and very simple to assemble. Nothing says summer like fresh tomatoes and basil.
 

Ingredients

  • 1 large eggplant
  • 1 large tub fresh mozzarella
  • 1 bunch fresh basil
  • 2 large tomatoes
  • 1-1/2 cups bread crumbs
  • 1 tablespoon garlic salt
  • 1/2 cup grated pecorino Romano cheese
  • 2 eggs
  • 1/4 cup milk
  • 1 cup vegetable oil for frying
  • Salt and pepper to taste

Method

Slice eggplant into 1/4 inch slices, skin removed. Beat eggs with milk and add eggplant 1 slice at a time. Place breadcrumbs, garlic salt and grated cheese into a shallow dish. After dipping eggplant in egg mixture, dredge in breadcrumb mixture. In a large frying pan put vegetable oil and fry eggplant slices until golden. Set aside eggplant on a paper towel to absorb excess oil. Slice tomatoes and mozzarella into 1/4 inch slices. Wash basil leaves and pat dry with a paper towel. Now arrange eggplant tower on a plate and top with the mozzarella followed by the tomato. Salt tomato with a sprinkle of garlic salt, a drizzle of olive oil then basil and repeat with second egglant round. Place a basil leaf on each eggplant tower.
