Fajita on a Stick

Strips of flank or round steak, marinated in lime juice & vinegar, are woven around bell pepper & onion chunks on skewers for grill appetizers.
 

Ingredients

  • 1 pound flank or round steak, cut into thin strips
  • 1/2 cup lime juice
  • 1/4 cup white vinegar
  • 1 red bell pepper, cut into 1/2 inch chunks
  • 1 green bell pepper, cut into 1/2 inch chunks
  • 1 large onion, cut into 1/2 inch chunks
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt

Method

Mix lime juice, vinegar, black pepper, cayenne and salt in a large bowl. Add steak strips and let marinate for 15-20 minutes. Place wooden skewers in water and let them sit while steak marinates. Preheat grill. After steak has marinated, weave steak onto skewers, around pieces of green bell pepper, onion and red bell pepper. It should look like steak is winding around vegetables in an "S" type pattern. Place on grill and reduce heat. Cook until meat is done to liking and peppers are starting to soften. Remove from grill and serve with sour cream and guacamole.

 

Notes: This is a great way to get your fiesta started. People just love food on a stick.
