Farmer's Casserole

This cheesy hashbrown casserole would be great for brunch - customize it with your choice of bacon or ham.
 

Ingredients

  • 3 c. frozen shredded hash brown potatoes
  • 1/4 c. shredded Monterey Jack cheese with jalapeno peppers or shredded cheddar cheese
  • 1 c. diced fully cooked ham or Canadian bacon
  • 1/4 c. sliced green onion
  • 1 c. refrigerated egg product or 4 beaten eggs
  • 1 12 oz can evaporated skim milk
  • 1/4 t. pepper
  • 1/8 t. salt

Method

Grease two-quart square baking dish. Arrange potatoes evenly in bottom. Sprinkle with cheese, ham, and green onion. In medium mixing bowl combine eggs, milk, pepper, and salt. Pour over potato mixture. Bake, uncovered, at 350 for 40-45 minutes or until center appears set. Let stand 5 minutes before serving.

 

Notes: This dish may be covered and refrigerated for several hours or overnight. In this case, bake an extra l5 min. Try serving it with melon wedges, strawberries, and orange sections. Stir a couple tsp. grenadine syrup into each glass of orange juice for a nice drink.
