A creamy, flavorful baked dish with filo dough, spinach, pecans, blue cheese and eggs. A great choice for a special brunch or wedding/baby shower.
Layer the filo into individual pie or muffin tins, brushing each layer with melted butter. Allow the edges of the pastry to hang out over the side of the tin; it will look a bit of a mess at this stage. Mix the spinach, pecans, blue cheese and cranberries (optional). Season with salt and pepper and divide the mixture into each of the filo pastry shells. Whisk together the eggs and egg yolks, cream, nutmeg to taste, and salt/pepper to taste. Pour egg mixture into muffin tins over the other ingredients and bake in an oven that has been preheated to 180C/350F for 20-25 minutes, until the filling is set.
Notes:
Take care, as the filo is delicate and can easily burn towards the end.
