Fresh Salsa Stuffed Peppers

Peppers stuffed with a tomato and avocado salsa make a quick and easy first course.
 

Ingredients

  • 2 medium green peppers
  • 2 tomatoes
  • 1/4 sweet onion
  • 1 avocado
  • 1 garlic clove
  • 1/4 cup balsamic vinegar

Method

Slice peppers in half and remove all seeds. Dice tomatos, onions, and avacado. Mince garlic clove. In a mixing bowl, combine tomato, onion, avocado, and garlic. Add 2 Tbsp of balsamic vinegar. Mix ingredients. Add a pinch of salt and pepper. Add salsa mixture to halved peppers (stuff them) and drizzle remaining dressing over peppers.
