Ingredients:
| 20-30 | Dried Apricots |
| 4 tsp | Vanilla Extract |
| ⅔ cup | Pecans, toasted |
| 4 oz | Cream Cheese, softened |
| 3 oz | Blue Cheese, crumbled |
| 1 Tbsp | Brandy or Sherry |
| 1 tsp | Grated Onion |
Directions:
Place dried apricots in a saucepan and add water to barely cover. Stir in vanilla. Bring apricots to a boil and simmer, uncovered, until tender, about 1-4 minutes. (Apricots should be tender, but not limp.) Drain apricots well and set aside. Place toasted pecans in food processor and grind until fine; set aside in a small bowl. Place cream cheese, blue cheese, onion and brandy in food processor; blend until smooth. Cover and refrigerate at least 2 hours. When mixture is firm, form into miniature balls; dip in pecans and fill apricots with cheese mixture.
