Cream cheese, blue cheese, brandy and grated onion are combined with a food processor, formed into balls, dipped in ground pecans and added to rehydrated dried apricots.

  • Servings: 20-30


20-30 Dried Apricots
4 tsp Vanilla Extract
⅔ cup Pecans, toasted
4 oz Cream Cheese, softened
3 oz Blue Cheese, crumbled
1 Tbsp Brandy or Sherry
1 tsp Grated Onion


Place dried apricots in a saucepan and add water to barely cover. Stir in vanilla. Bring apricots to a boil and simmer, uncovered, until tender, about 1-4 minutes. (Apricots should be tender, but not limp.) Drain apricots well and set aside. Place toasted pecans in food processor and grind until fine; set aside in a small bowl. Place cream cheese, blue cheese, onion and brandy in food processor; blend until smooth. Cover and refrigerate at least 2 hours. When mixture is firm, form into miniature balls; dip in pecans and fill apricots with cheese mixture.

Dried fruit is a life-saver when making appetizers. These dried fruits are in many grocery stores and when rehydrated they taste like fresh. I chop them and use them in sauces, salads and especially desserts.
