Garlic Bean Dip


This dip is vegetarian and a great starter for any meal or the perfect addition to your next football party.



Ingredients:

  • 2 14.5 oz can white beans
  • 1 or 2 cloves roasted garlic
  • 1 small onion chopped, saute until caramelized
  • Salt and pepper to taste
  • Toast triangles
  • 1 tbsp fresh chopped parsley
  • Extra virgin olive oil
  • Parmesan, optional

Method

Rinse and drain beans, mince garlic and cool the onions. Place all of these ingredients in a food processor and blend until smooth, adding oil as needed to keep smooth. Fold in parsley and add salt and pepper to taste. Spread the dip on toast and top with Parmesan if desired.
