Gazpacho Dip

This oniony gazpacho-like dip combines canned tomatoes, olives, green onions, and chilies for lots of flavor. Serve with scoop-shaped tortilla chips to get every bite.

Ingredients
  • 1 8-ounce can tomatoes, drained and cut up
  • 1 8-ounce can tomato sauce
  • 1 2 1/4-ounce can chopped ripe olives, drained
  • 1 bunch green onions, chopped
  • 1 4-ounce can chopped green chilies
  • 2 cloves garlic, minced
  • 3 Tbsp. olive oil
  • 3 Tbsp. red wine vinegar
 
Method

Mix together all ingredients in a non-reactive bowl. Cover and marinate overnight. Serve with scoop-shaped tortilla chips.

This recipe has been a favorite of friends and taken to a many super bowl parties.
