Gnocchi with Bacon Mushrooms and Cheese

An elegant side dish or appetizer course--made simple when you start with gnocchi from the store.
Ingredients
- 1 2-pouch box potato gnocchi, cook as directed on box
- 1/2 lb bacon, chopped and fried
- 1/2 stick unsalted butter
- 1/2 lb mushrooms, sliced
- 1 tsp chipotle chili powder
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 cup chicken stock
- 8 oz shredded Manchego cheese
- 4 oz grated Parmesan cheese

Method
Cook gnocchi as directed on package, drain, and set aside. In a large saute pan over medium high heat, fry chopped bacon until just before it becomes crispy. Remove bacon, set aside, and drain. Using the same pan, melt butter. Add mushrooms, chipotle, garlic, and salt to butter. Saute until almost tender, add stock, and reduce by half, about 4 minutes. To mushroom mixture, add bacon and gnocchi. Gently mix until gnocchi is completely coated. Evenly divide gnocchi mixture between 8 small ovensafe ramekins. Arrange ramekins on a baking sheet, top with Manchego and Parmesan cheese, and place under a broiler just until lightly browned and bubbly. Remove and garnish with fresh parsley.
Notes: This is a nice change from the same ole run of the mill potatoes served with a meal.
