Gourmet Cheeseball

Apricots and pecans make a great outside layer for this gourmet cheeseball. What a way to start a party.
Ingredients
- Six 8 oz packages cream cheese, softened
- 1 lb each Colby and sharp Cheddar cheeses, grated
- 4 tsp lemon juice or juice of one lemon
- 10 tsp smooth Dijon mustard
- 4 tsp minced roasted red pepper or pimiento 3/4 cup minced fresh chives
- 1/2 cup mayonnaise
- 8 tsp Worcestershire sauce
- 5 oz dried apricots
- 16 oz pecans

Method
Mix with clean hands. Roll into 4 large or 8 small balls. Sprinkle with or roll over 5oz dried apricots chopped well and 16 oz pecans chopped fine with a kitchen mallet. (Other garnishes may include: crushed walnuts, paprika, dried parsley). Wrap in plastic wrap and chill. Serve with crackers, bread or certain vegetables. Lasts in refrigerator for 10 days.
