Granola

This recipe makes two large cookie sheets of granola. Walnuts, pecans, almond and dried cranberries are combined with the old-fashioned oats.
 

Ingredients

  • 12 cups old-fashioned rolled oats
  • 1/2 cup EACH of chopped walnuts, pecans and sliced almonds
  • 1 cup wheat germ
  • 1 cup packed brown sugar
  • 1 1/2 cups maple syrup
  • 1 stick butter, cut up
  • 3 Tbsp water
  • 2 Tbsp cinnamon
  • 1 tsp vanilla
  • 1 tsp salt (or to taste, optional)
  • 2 cups dried cranberries
  • 1 cup shredded coconut (optional)
 
Method

Preheat oven to 275 degrees. In a large bowl, mix oatmeal, dried cranberries, nuts, wheat germ, coconut, and brown sugar. Grease two large cookie sheets with sides or spray them with nonstick cooking spray. In a saucepan, heat maple syrup, butter, water, cinnamon, vanilla and salt, stirring until butter melts. Pour the heated liquid over the dry ingredients and mix well. Spread mixture on cookie sheets. Bake for 30 minutes; stir in dried cranberries and coconut; bake a few minutes more or until mixture is a light golden brown.

 

Notes: You may add whatever spices you prefer and mixed dried fruit or raisins may be substituted for dried cranberries. You may freeze half of the granola for later, and store remainder in an air tight container.

 

Number of Servings: 48, 1/2 cup servings
