Grilled Garlic Artichokes

Cooked artichokes are brushed with a garlic and olive oil mixture. Grill to finish them and then cut into quarters to serve.
 

Ingredients

  • 2 artichokes, trimmed
  • 2 Tbsp. freshly minced garlic
  • 2 Tbsp. olive oil
  • Kosher salt

Method

Place 2 artichokes in boiling water for 30 to 40 minutes or until tender. Let cool. Preheat gas or charcoal grill to medium-hot. Cut artichokes in half and scrape out the fuzzy chokes. Brush each with a mixture of garlic, olive oil, and salt. Place artichokes on the heated grill for about 6 minutes and then turn for another 6 to 7 minutes. Cut each into quarters.

 

Notes: I love to place these on a serving dish with the leaves and heart intact. It's so easy to grill these up that you can make more at a time. They will be eaten very quickly!
