Hashbrown Potato Casserole

This side dish makes a great addition to breakfast, brunch, lunch or dinner. Cheesy potatoes with peppers and onion, what a dish.
 

Ingredients

  • 4 large potatoes
  • 1 green pepper, julienned
  • 4 large Vadalia onions, sliced
  • 2 cups shredded mild cheddar cheese
  • Sour cream
  • Parsley flakes
  • 1 cup butter
  • 2 cups hash browns
 
Method

Peel potatoes and arrange in casserole dish. Add green pepper, 1 cup shredded cheese, onions, salt, pepper, and butter. Add hash browns and cover. Bake in preheated oven for 45 minutes at 350 degrees. Remove and add 1 cup shredded cheese. Return to oven until cheese melts. Add sour cream and parsley flakes. Serve hot.
