Healthy Chicken Potstickers

If you are looking for a healthy appetizer that is easy to make, try these chicken potstickers. They are full of flavor and a snap to prepare.
 

Ingredients

  • 1 pound of boneless chicken breast
  • 1 1/2 cups of fresh chopped cabbage
  • 1/4 cup of grated carrots
  • 1 tbsp soybean oil
  • 2 tbsp soy sauce
  • 2 tbsp sour cream
  • 1/2 tsp ground ginger
  • 1 1/2 cups of all purpose flour
  • 1/4 tsp baking powder
  • 1 large egg
  • Salt and pepper to taste
  • Sauce:
  • 1/4 cup soy sauce
  • 2 tbsp granulated sugar
  • 1/2 tsp ground ginger

Method

In a medium skillet, heat oil on medium low heat. Cut chicken into 1 inch thick strips and add to oil. Heat until chicken is cooked through. Remove chicken from pan and chop. Return chicken to the pan and add chopped cabbage and carrots. Cover and simmer until cabbage is wilted and carrots are tender. In a separate bowl, mix 2 tbsp soy sauce, sour cream, and 1/2 tsp ground ginger. Remove chicken, cabbage, and carrot mixture from heat and toss with the soy sauce mixture. Set aside. On a clean work surface, combine flour, baking powder, and salt and pepper. Make a pool in the center of the flour mixture and add egg. Mix together to form dough. Roll with a rolling pin until very thin. Cut dough using a cookie cutter to about 3 inch width circles. Place 1 tbsp of chicken mixture in the center of each dough circle and fold over. Drop potstickers into boiling salted water, one at a time. Stir to make sure they do not stick. Boil for about 10 minutes on high heat. Remove from water and drain well. For sauce: Mix remaining soy sauce and sugar in a pan. Heat on medium high heat and stir until sugar is dissolved. Remove from heat, stir in ground ginger, and serve on the side for dipping.

 

Notes: There should be liquid remaining in the pan after removing the chicken to chop it. However, if not, stir in 1/4 cup of chicken broth before adding cabbage and carrots. Prep time is about 20 minutes and cook time is around 15 minutes. Very low fat and delicious.

 

Number of Servings: Serves 4-6 people as an appetizer
