Hot Italian Dates

Dates stuffed with gorgonzola cheese, rolled in bread crumbs and parmeseano reggiano cheese, and wrapped in thin Italian ham.
Ingredients
- 18 pitted medjool dates, split
- 1 Tbsp olive oil
- 6 oz gorgonzola cheese
- 1 cup seasoned bread crumbs
- 1 cup freshly grated parmesano reggiano cheese
- 6 oz Gorgonzola cheese
- 1/2 pound Italian ham, sliced thin

Method
Preheat oven 400 degrees. Using 1 tbsp olive oil, rub each date to coat. Next gently open each date without breaking the spilt. Set aside. In a medium size bowl combine 1 cup seasoned bread crumbs with 1 cup freshly grated Parmesan cheese; stir together and set aside. On a cutting board, lay out Italian ham slices. Add to date center 1-1 1/2 tsp of Gorgonzola cheese. Gently press the date back together and roll gorgonzola stuffed date in bread crumb mixture. Dates will grab a bit of crumb mixture. Wrap each date with a piece of Italian ham. Set on parchment lined cookie sheet. Repeat until finished, then bake. Cooking time 10-12 minutes.
Notes: If you notice dates have not grabbed much bread crumb mixture, line Italian ham slice with one tablespoon of crumb mixture before wrapping date.
