Hot Popper Sandwiches

Extra-thick slices of bread are spread with cream cheese and topped with cheeses, then buttered, baked and quartered into appetizer pieces.
Ingredients
- 8 slices Texas toast
- 8 oz cream cheese, softened
- 8 oz sliced hot pepper cheese
- 8 oz sliced extra-sharp cheddar cheese
- Softened butter

Method
Spread cream cheese on one side of each slice of Texas toast. To 4 pieces of bread add one slice hot pepper cheese and one slice extra sharp cheddar cheese. Top with another slice of Texas toast, cream cheese side down. Butter outside of each sandwich, and place on a cookie sheet in preheated 425 degree oven for 6-8 minutes on each side or until golden brown. Cut each sandwich into 4 appetizer portions.
