Hot Spinach Dip & Home Made Pita Chips

Yummy individual pita chips with a dolop of hot spinach dip.

Ingredients:

1 pkg Frozen Spinach, 6 oz
1 pkg Cream Cheese, at room temp.
1 Tomato
½ Onion
12 oz Shredded Mozzarella Cheese
1 Jalapeno
Chips:
6 Pitas
1 cup Melted Butter
1 Tbsp Lemon Pepper
1 Tbsp Oregano

Directions:

1. Preheat oven to 350. Thaw spinach, drain it, and chop it into smaller pieces and put in a large mixing bowl.

2. Chop the cream cheese in small chunks, 1/2 inch in size. and put into bowl.

3. Dice onion, tomato, and jalapeno and put into the mix.

4. Add the shredded cheese and stir together.

5. Put into a greased ceramic pan and bake for 25 minutes or until bubbly on top.

Chips:

1. Open all the pitas and tear in half.

2. Cut the halves in three triangle pieces each so you have 36 Chip sized pieces.

3. On a greased cookie sheet arrange the chips and set aside.

4. Melt the butter and mix in the lemon pepper and oregano.

5. Lightly brush the mixture over the pita chips and place in the oven.

6. Repeat step 5 in 5 minutes after putting chips in the oven, bake until crispy.

Serve the chips on a platter with a small serving of the dip on each one, add an olive on top for decoration if desired.
