Hummus with Pita Bread


Garbanzo beans, also known as chickpeas, are blended with garlic, lemon juice, and a hint of cayenne pepper to form hummus. Serve this hummus recipe as a dip or as a spread on pita bread.



Ingredients:

  • 4 cups cooked or canned garbanzo beans, drained (chickpeas)  
  • 3 garlic cloves  
  • 4 Tbsp. lemon juice  
  • Dash of cayenne pepper  
  • 1 sprig of parsley  
  • 1 pkg. whole wheat pita bread (4 pockets, cut into triangles)  
  • Assorted cut-up raw vegetables such as broccoli, zucchini strips, radishes, and red and green bell pepper slices)

Method

In a food processor or blender, puree the garbanzos with the garlic, lemon juice, and cayenne until smooth. Adjust seasoning to taste. Place in bowl. Garnish with a sprig of parsley and a sprinkling of more cayenne. Spread on pita triangles and serve with vegetables.
