Irish Balls

Ingredients:
| 3 | Large Potatos |
| ½ cup | Sour Cream |
| ½ cup | Diced Ham |
| ¼ cup | Chopped Carrots, chopped small |
| ½ cup | Minced Onions |
| ½ cup | Chopped Celery, chopped small |
| 2½ cups | Shredded Sharp White Cheddar Cheese |
| 2 cups | Crushed Kellogs Corn Flakes. |
| 1 cup | Flour |
| 1 | Egg |
| Splash of Milk | |
Directions:
Peel potatos and cook in boilng water and 2 tsp. salt until you can easily pierce them all the way through with a fork. About 35 minutes. While cooking potatos fry up veggis in a frying pan with 1 tbsp of olive oil until tender. Remove potatos from boiling water and put into a bowl to mash. Add Sour cream and mash potatoes. Some smaller lumps are ok. Now add the fried veggis and diced ham. Mix together. Let mix cool some before adding cheese. While mix is cooling heat oil in a frying pan about 3/4 of an inch deep. (I like peanut oil but veggi oil will do also) Turn heat up to medium high and let the oil heat up. You will know oil is ready if you drop a tiny droplet of water in, it will sizzle. Now add cheese to mix and stir in. Roll potato mix in your hands into 1 to 1 1/2 in balls, roll into flour, dip in egg wash (beat egg and splash of milk) then roll into crushed corn flakes. Prepare all balls first and then fry until golden brown on all sides. Let set to cool just a bit and then enjoy:)
