Italian Bruschetta

Slices of toasted French or Italian bread are spread with basil pesto and topped with roasted eggplant, red peppers, and mozzarella cheese, then broiled. Serve with marinara sauce.
 

Ingredients

  • French or Italian bread
  • 1 garlic clove, slivered, in 1/2 cup olive oil
  • Basil pesto
  • 1 small purple eggplant
  • 1 jar roasted red peppers
  • Mozzarella cheese slices
  • 1 cup marinara sauce

Method

To make 4 servings, cut 4 slices (3/4-inch thick) from loaf of bread. Brush both sides with some of the garlic-flavored olive oil. Place on hot grill (or under broiler) until toasted, turning once. Place slices on cookie sheet and spread each with about 1 tablespoon pesto. Cut 4 larger or 8 smaller slices (about 1/2-inch thick) from the eggplant; grill or broil until tender, turning once. Place on top of bread. Cut one of the roasted red peppers into 4 squares and place atop; cover with a slice of cheese. Bake in 450 degree oven until cheese melts. Remove & serve at once with or atop a bed of marinara sauce.
