Italian Sweet Onion Crostini

These colorful appetizers are full of flavor and perfect for any occasion, from game day to a truly elegant event.
Ingredients
- 1 French baguette, sliced into 1/2 inch rounds
- 1/4 cup extra-virgin olive oil
- 6 ounces pancetta, diced
- 2 sweet onions, diced
- Salt and freshly ground black pepper
- 2 cups fresh basil leaves, packed
- 1/4 cup Parmesan cheese, freshly grated

Preheat oven to 375 degrees F. Spread the baguette slices on a baking sheet. Using a pastry brush, brush the tops of the baguette slices with 2 tablespoons olive oil. Place in the oven and bake until the bread has started to brown and become crispy, about 7 minutes. Remove from the oven and set aside. Heat a large non-stick skillet over medium-high heat. Add pancetta and cook for 5 minutes, or until crispy. Drain on paper towels. Remove all but 1 tablespoon of pancetta fat from skillet and add remaining 2 tablespoons olive oil. Add sweet onions and saute for 5-7 minutes, stirring occasionally. Turn heat to low and cook for 15 more minutes, stirring occasionally. Season with salt and pepper. To prepare crostini, place a basil leaf on top of each piece of bread. Spoon a generous amount of sweet onions on top of the basil and add a few pieces of pancetta. Sprinkle with Parmesan.
