A fast dipping sauce with lots of fresh Italian flavors. And so much healthier than butter.
Smash garlic with a heavy pan or the side of a large knife and remove skins. Put peeled garlic into a shallow bowl and add remaining ingredients. Do not stir (you want the oil and vinegar to form pretty layers.) Serve immediately.
Notes:
My family likes this with robust Italian food such as spaghetti or roasted stuffed peppers.
