Italian Herb Cheese Bruschetta


Cheesy and loaded with spices--this warm bruschetta will be a great hit at your next party.



Ingredients:

  • 1 long narrow loaf Italian semolina bread
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 ounce container herb cheese spread
  • 1/4 cup packaged basil pesto sauce
  • 1 Tablespoon chopped fresh parsley
  • 8 slices Italian salami, chopped fine

Method

Preheat oven to 375 degrees. Cut bread on the diagonal into 1/4 inch slices. Place bread on 2 cookie sheets, spray or drizzle with olive oil. Sprinkle with salt and pepper and bake at 375 degrees for 12-15 minutes till crisp and golden. Remove from oven and set aside. While bread toasts in oven, add herb cheese spread to a medium bowl. Add 1/4 cup basil pesto sauce, 1 Tablespoon chopped parsley and the chopped salami. Stir well to combine. Spread the herb cheese mixture on the toasted bread slices and serve.
