Italian Stuffing


No matter what your heritage, this stuffing is a great addition to any family celebration.



Ingredients:

  • 1 lb loaf white bread, cut into cubes
  • 6 eggs, beaten
  • 1 cup diced prosciutto
  • 1 cup salami, diced
  • 4 ounces pepperoni, diced
  • 16 ounces mozzarella cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Ground black pepper to taste
  • Chicken broth to wet bread

Method

Place bread cubes in a large bowl and sprinkle with enough chicken broth to moisten. Add eggs, prosciutto, salami, pepperoni, mozzarella, Parmesan, parsley and pepper and mix well. Place stuffing in a bowl or casserole dish. If using a casserole dish, bake tented with aluminum foil, at 375 degrees for 35 to 45 minutes.

Notes: This is a recipe that was created by my grandfather and I took and made it my own. Like many Italian families the recipe was never written down I remember how it tasted and came up with this stuffing recipe. It is on my table every single Thanksgiving.
