Jenny's Quiche

Choose-your-own filings and either Swiss or Cheddar cheese for this rich quiche recipe made with mayonnaise. You can make this a meatless Easter brunch main dish or a meat filled appetizer if you wish.
 

Ingredients

  • 4 eggs
  • 1 cup real mayonnaise
  • 1 cup milk
  • 2 Tbsp cornstarch
  • 1 1/2 to 2 cups total of any of the following: Diced ham, small brocolli floweretts, chopped fresh spinach, sliced mushrooms, or diced carrots (slightly cooked)
  • 2/3 cup sliced green onions (including some of the green)
  • 2 cloves of garlic, minced
  • Pinch of pepper
  • 1 1/2 cups shredded Swiss and/or cheddar cheese
  • Unbaked pastry for pie or quiche

Method

Whisk or beat in a bowl, the eggs, mayonnaise, milk, and cornstarch. Stir in the 1 1/2 to 2 cups of ingredients you have selected, the green onions, garlic, pepper and cheese. Mixture will be thick. Pour into crust-lined quiche pan or 9-inch pie plate. (I use the Pillsbury Already Pie Crusts.) Bake 40 minutes, at 350 degrees or until a table knife inserted off-center comes out clean and dry.

 

Notes: You can switch the ingredients around to make just a veggie quiche, a meat quiche, or a combination of the two. Everyone that tastes this dish asks for the recipe!
