Lima Guacamole

Canned lima beans are pureed with onion, jalapeno, lemon juice, garlic & seasonings to make this dip. Chopped tomato is stirred in at the end.
 

Ingredients

  • 1 15-oz can lima beans
  • 1 tablespoon lemon juice
  • 1/2 teaspoon (McCormick Season-All) seasoning salt
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon pickled jalapeno slices, finely chopped
  • 2 cloves garlic, minced
  • 1/2 medium tomato, seeded and chopped
  • 1/8 teaspoon freshly ground pepper
  • Tortilla chips

Method

Drain lima beans, saving 4 tablespoons (1/4 cup) liquid. Put beans, the reserved bean liquid, and the rest of the ingredients, except tomato, in food processor. Process until beans are smooth. Transfer to bowl and stir in chopped tomato. Cover and refrigerate until chilled. Serve with tortilla chips.

 

Notes: I concocted this recipe, trying to come up with a lighter version of guacamole. I was pleasantly surprised with the results. Not only is it flavorful, but less fattening.
