Little Zucchini Cheese Nests

For these appetizers, finely shredded zucchini with egg white is baked as the "nest," and filled with salmon cream cheese shaped as eggs.
 

Ingredients

  • 2 Cups Grated Peeled Zucchini, Drained and squeezed Dry
  • 1 Egg White, Lightly Beaten
  • 1/4 Teaspoon Salt
  • 1/8 Teaspoon White Pepper
  • 1/3 Cup Kraft Soft Cream Cheese With Salmon Spread
  • Paprika & Fresh Dill Sprigs, Optional

Method

In a bowl, combine the zucchini, egg white, salt and pepper. Place 1 Tablespoonful in each of 24 well-greased miniature muffin cups, lining the bottom and the sides of cups. Bake at 375 degrees for 20 to 25 minutes or until golden brown. Cool for 2 to 3 minutes before removing from pans to wire racks to cool completely. Shape 1/2 teaspoonfuls of cream cheese into ovals to resemble an egg; place in zucchini nests. Sprinkle with a little paprika and add a dill sprig, if so desired. Serve at room temperature.

 

Notes: These cute little zucchini nests are quite simple to prepare, very tasty, and look lovely on any serving dish.
