Loaded Baked Potato Bruschetta

This versatile side dish is a great addition to any style of meal. The crusty baguette is topped with all of the fixings of a loaded baked potato.
 

Ingredients

  • 1 French baguette approx. 16 inches long
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 4 oz marbled cheddar and Monterey Jack cheese, shredded
  • 4 green onions, chopped
  • 4 slices of bacon
  • 1/4 tsp salt
  • 1/2 tsp black pepper

Method

Preheat oven to 400 degrees. Fry bacon until crisp. Drain fat, cool, crumble and set aside. Line a cookie sheet with foil for easy cleanup. Slice the baguette in half lengthwise and place on the cookie sheet. In a mixing bowl, mix the mayonnaise and sour cream until smooth. Mix in the shredded cheese, chopped green onions, bacon pieces, salt and pepper. Spread the mixture evenly over each baguette half. Bake in the oven for 10-15 minutes until bread is crisp and the topping is hot and bubbly. Let cool slightly and slice with a serrated knife into 1 inch slices.
