Loaded Creamy Chicken Salad

Apples and curry powder give this chicken salad unique flavor. Spread on crackers or warm sour dough bread for an easy, make-ahead appetizer.Ingredients
- 4 chicken breasts, deboned and cubed
- 1 cup mayonnaise
- 1 tbsp mild yellow curry powder
- 1 Granny Smith apple, cubed
- 1 cup toasted walnuts
- 1 cup Vidalia onion, minced
- 1 cup celery, minced
- 3 tbsp Dijon mustard
- 1 tsp sugar
- 1 tsp cinnamon

Method
Place walnuts on a cookie sheet, sprinkle with sugar and cinnamon. Bake for fifteen minutes at 350. Mix together onion, celery, mayonnaise, mustard, curry, and apples. Take the cooled walnuts and chop coarsely. Mix all ingredients together and chill for an hour or overnight. Spread on crackers or warm sour dough bread.
