Low Fat Potato Skin Nachos

These potato skins are a healthy, low fat treat when loaded with low fat sour cream, olives, tomatoes, onion, guacamole and refried beans.
 

Ingredients

  • 3 medium potatoes
  • 1/2 tablespoon vegetable or olive oil
  • 1/2 cup low fat cheddar cheese
  • 1/3 chopped black olives
  • 1/2 cup tomatoes, diced
  • 1 tablespoon chopped green onions
  • 1/3 cup low fat sour cream
  • 1/4 packet taco seasoning
  • 1/2 cup guacamole
  • 1/2 cup refried beans

Method

Lightly baste vegetable oil on thin strips of potato, with skins attached. Preheat oven to 350 degrees and bake until browned. In a bowl, combine chopped green onions, low fat sour cream, taco seasoning, and refried beans. Top potatoes, with refried beans mixture and sprinkle with shredded cheese, black olives, tomatoes, and guacamole.
