Lynn Klatt's Chese Puffs


A cheesy mixture of cheddar, margarine, flour and paprika is wrapped around a small stuffed olive or cocktail onion, then baked.



Ingredients:

  • 2 cup shredded sharp cheddar cheese, at room temperature  
  • 1/2 cup margarine, softened
  • 1/4 tsp. salt  
  • 1 c. sifted flour
  • 1 tsp. paprika
  • 48 small stuffed olives or cocktail onions  

Method

Blend cheese & margarine. Add flour, salt & paprika. Mix well. Wrap about 1 teaspoon cheese mixture around olives or onions. Freeze firm. Bake at 400 degrees, about 15 minutes. Serve hot.

Notes: These can be made in advance & frozen for up to a week if necessary. Freeze the puffs initially on a baking sheet, then place in freezer bag. Be sure freezer bag is sealed tightly. Also, you may wish to add a bit of red pepper to taste. This recipe is NOT mine. It's from a family friend, and the credit goes to her.
