This creamy dip served with fresh asparagus is a healthy alternative to the usual party fare.
Break asparagus tips from the stalks by holding one end in each hand and pressing down until the asparagus finds it's natural breaking point and snaps. Discard the stalks. Steam the spears until bright green and slightly tender. The asparagus needs to be firm for dipping. Remove from heat and place in cold water with ice to stop the cooking process. Cream together remaining ingredients. Add more parmesean to thicken if dip is too thin. Garnish by placing thin slices of lemon over the asparagus and serve next to the dip.
Notes:
If your family likes asparagus, they will love this appetizer. You can make the day before and refrigerate.
