Mango Chutney Brie

Look for red curry paste in Asian markets or in the ethnic foods aisle of larger supermarkets.
Ingredients
- 1 8-oz. package cream cheese, softened
- 4 tsp. red curry paste
- 1 6-inch wheel Brie cheese
- 1 8-oz. jar mango chutney, snipped
- 1/4 cup roasted salted cashews
- 4 green onions, thinly sliced
- Assorted vegetables, crackers, and/or baguette slices

Method
In a food processor combine cream cheese and curry paste; pulse until combined (more curry paste may be added if more heat is desired). Place brie on a serving platter; spread the curry-cream cheese mixture on top. Top with chutney. Sprinkle cashews and green onions over the top. Serve with vegetables, crackers, and/or baguette slices.
Notes: This recipe combines hot, sweet, tart, and crunchy flavors and textures and is always a big hit. It is wonderful in the summer
