Mango-Pineapple Salsa

This colorful salsa combines mango (or peaches) with canned pineapple, peppers, red & green onion, cilantro & lime juice.
Ingredients
- 1 can crushed pineapple
- 1 1/2 c. chopped mango
- 1 or 2 finely chopped, seeded Serrano peppers (or to taste)
- 1/4 c. chopped red bell pepper or pimiento
- 1/4 c. chopped green onion
- 1/4 c. chopped red onion
- 1/4 c. chopped cilantro
- 1 Tbsp fresh lime juice

Drain pineapple thoroughly. Chop all ingredients and mix well. Drizzle lime juice over salsa and mix a bit more. Serve with tortilla chips OR use as a zesty and refreshing condiment for fish, chicken or pork.
Notes: If you can't get mangoes, fresh peaches will substitute well. This was a big favorite at our town's First Annual Salsa Festival in September of 2006. It's addicting!
