Maple-Chipotle Party Meatballs

These meatballs are a great way to start a party. The sweet from the maple and the spicy from the chipotle really balance each other out for a fabulous flavor.
Ingredients
- Meatballs:
- 1 lb ground beef
- 1 lb ground pork
- 1 sm onion, diced
- 2 eggs, lightly beaten
- 1/3 cup milk
- 1 cup breadcrumbs
- 3/4 tsp salt
- 1/2 tsp black pepper
- Sauce:
- 2 cups cold water
- 3 tbsp cornstarch
- 1 tsp apple cider vinegar
- 1 heaping tbsp brown sugar
- 1 1/2 cups pure Vermont maple syrup
- 4-5 (canned) chipotle peppers in adobo sauce, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp garlic powder

Method
Combine all meatball ingredients and mix together until combined. Form into 1" meatballs. Cook in 350 degree oven for approx. 20 minutes, or just until cooked through. While meatballs are cooking, in a bowl, whisk together cold water and cornstarch. Add all other sauce ingredients and stir until combined. (Sauce will be watery and will thicken when cooked.) When meatballs are done, transfer to crock pot, pour on sauce and set to high for one hour. Reduce to low for an additional hour. Stir occasionally. Serve hot.
