Mardi Gras Grilled Veggies

These veggies are good enough to be a meal. Add some shrimp or chicken for some protein or leave it vegetarian.
 

Ingredients

  • 1 red pepper
  • 1 orange pepper
  • 1 medium yellow squash
  • 1 medium green squash
  • 1 large Vidalia onion
  • 1 lb fresh sugar snap peas
  • 2 cups cubed pineapple, fresh or canned
  • 1 tsp garlic salt
  • 1 tbsp Italian seasoning
  • 3 tbsp olive oil

Method

Heat grill until very hot. Cut peppers, onion and squash with skin, into 1 inch pieces. Put all ingredients in a bowl and mix until well coated with oil and spices. Heat vegetable grill pan until hot. Turn vegetables occasionally. When done they should still be a little firm and have browned some.
