Marinated Vidalias


Sliced vidalia onions are chilled in a tangy-sweet marinade recipe of vinegar and sugar. After draining, they are combined with a little mayonnaise and celery seed for extra flavor and served on lettuce as a cold appetizer.



Ingredients:

  • 2 medium Vidalia onions
  • 1 cup water  
  • 1/2 cup sugar  
  • 1/4 cup white vinegar  
  • 1 Tbsp. plus 1 tsp. mayonnaise  
  • 1 tsp. celery seed  
  • Lettuce leaves    

Method

Slice onions and separate into rings. Combine water, sugar, and vinegar, stirring until sugar dissolves. Pour over onion rings. Cover and chill at least 3 hours. Drain. Stir in mayonnaise and celery seed. Serve on lettuce leaves.
