Marvelous Marinated Olives

Olives, tomatoes, and grapes combine with an herbed orange vinaigrette in this appetizer. Toss with Parmesan before serving.
Ingredients
- 1 lb mixed pitte olives
- 1/4 cup extra-virgin olive oil
- 1 sprig fresh thyme, leaves minced
- 1 sprig fresh rosemary, leaves minced
- 2 cloves garlic, minced
- 2 Tbsp. fresh orange juice
- 1 cup seedless red and/or green grapes, halved
- 1 cup grape tomatoes, halved
- 1 cup grated aged Parmesan

Method
Mix all ingredients except cheese in a medium bowl. Cover and refrigerate for 4 hours or overnight. Put olives in a serving bowl and toss with cheese to serve.
Notes: Use a combination of your favorite olives.
