Marvelous Marinated Olives

Olives, tomatoes, and grapes combine with an herbed orange vinaigrette in this appetizer. Toss with Parmesan before serving.
 

Ingredients

  • 1 lb mixed pitte olives
  • 1/4 cup extra-virgin olive oil
  • 1 sprig fresh thyme, leaves minced
  • 1 sprig fresh rosemary, leaves minced
  • 2 cloves garlic, minced
  • 2 Tbsp. fresh orange juice
  • 1 cup seedless red and/or green grapes, halved
  • 1 cup grape tomatoes, halved
  • 1 cup grated aged Parmesan
  • cheese

Method

Mix all ingredients except cheese in a medium bowl. Cover and refrigerate for 4 hours or overnight. Put olives in a serving bowl and toss with cheese to serve.

 

Notes: Use a combination of your favorite olives.
