Ingredients:
| 8 | Small Red Potatoes |
| 1 Tbsp | Extra Virgin Olive Oil |
| 1 Tbsp | Lemon Zest |
| Juice of One Lemon | |
| ¼ cup | Chopped Dill |
| 2 tsp | Kosher Salt |
| 1 tsp | Cracked Black Pepper |
| 1 cup | Hummus |
| ¼ cup | Diced Kalamata Olives |
| 4 oz | Feta Cheese |
Directions:
Cut potatoes in half and place in a medium bowl. Drizzle with olive oil, lemon zest and juice, then toss lightly. Season potatoes with dill, salt and pepper. Place potatoes on a baking sheet and bake at 350 degrees for 15-20 minutes, or until tender. Allow potatoes to cool. Once potatoes have cooled, top with hummus, olives and feta. Serve with tzatziki sauce.
Helpful Tips:
I created these for a Mediterranean themed dinner party. I served the potatoes with tzatziki sauce for dipping. Everyone loved all the flavors packed in these small red potatoes.
