Mexican Corn Salad

Fresh corn mixed with onion, cilantro, cheese and lime flavored mayonnaise makes a great salad that is great for a BBQ.
 

Ingredients

  • 4 fresh ears corn, husked
  • 1/2 red onion, diced
  • 1/2 cake cotija cheese, crumbled
  • 1/4 cup cilantro, minced
  • 3/4 cup lime flavored mayonnaise
  • 1 tsp chili powder
  • Salt to taste

Method

Boil corn in water for 8-10 minutes. Drop into ice cold water and let cool for 20 minutes. Cut kernels off cob and place them in a large bowl. Add red onion, cotija cheese, cilantro and chili powder then toss. Mix in mayonnaise. Add salt and pepper to taste. Chill until serving.
