Microwave Eggs Benedict

A quick, hot egg dish with ham and english muffins that can be made in the microwave.
 

Ingredients

  • 1 cup margarine or butter
  • 1 cup flour
  • tsp dry mustard
  • 2 cups milk
  • 2 tsp Worcestershire Sauce
  • 1 cup grated Cheddar Cheese
  • 1 cup cubed ham
  • 6 hard cooked eggs, chopped
  • 4 English Muffins, halved and toasted

Method

In a 1.5 quart casserole dish in microwave, melt margarine or butter on high for 1 minute. Blend in flour and dry mustard. Stir in milk. Microwave, covered on high for 4 to 6 minutes until thick, stirring occasionally. Beat and whisk until smooth. Add Worchestershire sauce and cheese. Microwave on high for 1 minute until the cheese melts. Mix in ham and eggs. Microwave 1 minute on high until hot and bubbly.
