Mini Fruit Pizzas


This pizza is great as a healthy appetizer, a kid friendly snack, or as a fun dessert. The kids will really enjoy helping prepare this too.



Ingredients:

  • 2 large apples
  • 1/2 cup 100% fruit strawberry spread
  • 1/2 cup grated jicama
  • 1/4 cup small strawberries

Method

Cut apples horizontally at widest part of the apple at a 1/4 inch thickness. Each apple will yield 2 large circular shaped pieces. (Enjoy the leftover parts as snacks!) Remove "star" core in the middle, leaving as much of the apple as possible. Spread each "crust" with 1/8 cup of the fruit spread. Top this "sauce" with 1/8 cup grated jicama "cheese". Slice the strawberries horizontally. Arrange on top of the jicama like "pepperonis".
